Dropa khasa (tripe recipe from Tibet) |

Ingredients2 pounds of tripe 1 onion 3 cloves of garlic 5 green chilies 1 teaspoon of turmeric 1 teaspoon of red chili powder Salt Pepper |
DirectionsWash the tripe and put it in a pot. Cover with water. Add a teaspoon of salt, bring to a full boil and lower the heat. Continue boiling for at least two hours until tender. Once the tripe is fully cooked, cut it into thin strips. Sauté the minced garlic and the sliced onion until brown. Let the turmeric soak in one tablespoon of water. Add the tripe, let it fry a few minutes then add the turmeric mixed with water. Salt and pepper to taste, continue frying a few more minutes. Add red chili powder and the sliced green chilies and continue to fry until the green chilies are cooked. |
